ricetta dei tagliolini alla crema di zucca, funghi e briciole di pane dalla pasta. In una ciotola raccogliete le due farine e le uova. Mescolate con una forchetta e successivamente impastate a mano fino ad ottenere un impasto morbido, liscio ed elastico. Qualora fosse troppo asciutto unite l\u2019acqua a poco a poco, nella quantit\u00e0 necessaria. Formate una palla d'impasto e fatelo riposare, avvolto nella pellicola alimentare, per 10 minuti.<\/div><\/li><li id=\"wprm-recipe-4140-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Trascorso questo tempo tagliate l\u2019impasto in 4-5 pezzi. Prelevate un pezzo alla volta (mantenendo gli altri avvolti nella pellicola per evitare che si secchino) e tiratelo in una sfoglia sottile con il matterello, sulla spianatoia infarinata. In alternativa potete usare l'apposita macchinetta sfogliatrice. In questo caso appiattite la pasta leggermente con il matterello e fatela passare attraverso i rulli, partendo da uno spessore elevato e giungendo a quello pi\u00f9 sottile desiderato. Cospargete di farina al bisogno e tagliate le sfoglie se dovessero risultare troppo lunghe. A mano a mano che sono pronte disponetele sulla spianatoia infarinata e copritele con un canovaccio.<\/div><\/li><li id=\"wprm-recipe-4140-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Una volta pronte tutte procedete alla realizzazione dei tagliolini montando l'apposito rullo sulla macchinetta. Nel caso in cui procediate a mano, invece, arrotolate delicatamente ogni sfoglia su se stessa, per il lungo, e tagliatele a striscioline sottili con un coltellino affilato. Raccogliete man mano i tagliolini e lasciateli asciugare sul piano di lavoro infarinato.<\/div><\/li><li id=\"wprm-recipe-4140-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Nel frattempo, preparate la crema di zucca: in una casseruola fate appassire lo scalogno a fettine nell\u2019olio, quando sar\u00e0 diventato trasparente unite la zucca a dadini, il timo, sale e pepe. Cuocete per circa 15 minuti o fino a quando la zucca sar\u00e0 tenera. Spegnete il fuoco, unite il latte e frullate con un mixer a immersione. Se lo ritenete necessario aggiungete poca acqua calda. Tenete da parte.<\/div><\/li><li id=\"wprm-recipe-4140-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Mondate i funghi e tagliateli a cubetti. Fateli dorare in una padella con olio e aglio. Salate, pepate e unite il timo. Portate a cottura. In una seconda padella fate dorare il pangrattato in poco olio d\u2019oliva.<\/div><\/li><li id=\"wprm-recipe-4140-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Lessate i tagliolini in acqua salata bollente, scolateli al dente e uniteli alla crema di zucca, diluendo con poca acqua di cottura al bisogno. Mescolate con molta delicatezza, roteando la pentola in modo che i tagliolini si condiscano perfettamente senza rompersi. Trasferiteli nei piatti da portata, completate con i funghi, qualche fogliolina di timo e una spolverata di pangrattato dorato.
